Birthday Cake Peanut Butter Icing and Chocolate Cake
Making the Peanut Butter Icing is very easy. Take any pre made white icing and add 3 tbs of peanut butter and 1/4 c powder sugar. Mix well and ice your cake/cupcake.

Homemade Beef Stew and Biscuits
This beef stew is a brown stew and is wonderful on cold winter days or if you just want something comforting. I always make this on a snowy day so my husband and boys can warm up after shoveling and playing. The stew is even better the next day.
1 large package of beef cubes (cut into bite size)
1 large onion (chopped)
6 garlic cloves (chopped)
5-6 potatoes (cut into bite size)
3 carrots (pealed and cut into bite size)
1 package of frozen peas
1/2 package of frozen cut string beans (optional)
1 can tomatoes (chunky or sauce whatever you like)
1/3 c red wine vinegar
3/4 c teriyaki
1/4 c worcestershire sauce
1c flour and 1c water (mixed until lumps are gone)
water
salt and pepper to taste
In a large pot put onion and garlic in with a little olive oil and cook till onions are translucent. Add the beef and brown. Add the tomato, vinegar, teriyaki,and worcestershire sauce. Stir and let cook for 10 minutes. Add the potatoes and carrots. Add water till it covers the mixture. Let this cook covered for 1 1/2 hrs. Mix in a little at a time the flour/water mixture (this will thicken the stew) Add the peas and cut string beans. Cook for 1 hr occasionally stirring. Salt and pepper to taste.
Homemade Biscuits
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
2 tbs shortening
3 tbs cold butter
1 cup milk
Preheat oven to 425
In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening and butter. Gradually stir in milk until dough pulls away from the side of the bowl.Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter dipped in flour.I used a glass to make the circles and it worked great.Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet. I you would like you can brush the top with some melted butter.Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

This is my Grandmothers recipe pasted down to me. I make this around the holidays especially Easter.

Pepperoncini Chicken

This is a very easy and so tasty. Has a great kick and nice heat from the pepperoncici peppers and the garlic is outstanding.
1 package chicken parts
15-20 garlic cloves whole but smashed down with a knife
1 jar (about 12 0z.) pepperoncini peppers with seeds and stems removed (keep seeds in for added heat)
olive oil
In a large deep skillet (big pot will be fine) lightly cover the bottom with olive oil. Add the garlic, peppers and chicken with the skin side down. Turn up the heat to medium and let it cook occasionally turning the chicken. Turn the chicken skin side down for the last 10 minutes and let it cook until the skin is brown and the chicken is cooked, and garlic is browned. Serve warm.
Homemade Chicken Pot Pies
These are actually very easy and so good. Most of the time i use chicken i have already made during the week like from an oven roaster or chicken parts from another dinner. I just shred the left over chicken off the bone and put it in a container or zip lock bag until ready to use.

- 1 1/2c cooked chicken shredded or cubbed
- 3/4 cup sliced carrots
- 3/4 cup frozen green peas
- 1/3 cup celery diced
- 1 c potatoes cubed
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 tsp rosemary
- 1/2 tsp thyme
- 1 3/4 cups chicken broth
- 2/3 cup milk
- Preheat oven to 425 degrees F (220 degrees C.)
- In a saucepan, combine, potatoes, carrots, peas, and celery. Add water to cover and boil for 10 minutes. Remove from heat, drain , add chicken, and set aside.
- In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, rosemary, thyme,slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
- Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. put it on a cookie sheet in case it spills over while cooking.
- Bake in the preheated oven for 30 to 35 minutes, or until crust is golden brown and filling is bubbly. Cool for 10 minutes before serving.
